Spontaneous lactic acid fermentation is an important process in cereal processing. It is applied to develop and enhance taste and flavour, modify texture and improve the microbial safety of foods. When applied to nixtamalized corn mixed with traditional steeped corn it is expected to further improve the functionality, improve nutritional quality and provide an alternative corn-based ingredient. The objective of this study was to investigate the chemical and functional properties of fermented blends of steeped and nixtamalized corn. Perhaps the most noteworthy product of Korean civilization, han'gŭl is a source of pride among Koreans: not only does it embody a sense of national uniqueness, but it is also a valuable tool against illiteracy. While this great cultural achievement has merited considerable attention in Korea, detailed English-language accounts of han'gŭl are scarce. Most prominent among this small body of work is Gari Ledyard's 1966 dissertation, "The Korean Language Reform of 1446," since republished (with modest revisions) in 1998. It is well recognized that at particular times in the growing season weather can be a critical determinant of crop yield. Here we report research which identifies those periods and quantifies their impact. This research can be useful in understanding the yield impacts of the often discussed and debated issue of climate change. A shift in climate may change the level and variability of temperature and precipitation in critical crop growing stages. To better understand how climate change would impact crop yields, identifying those critical growing stages and quantifying their impact on yield is important.

A Simple Reason For A Big Difference: Wolves Do Not Look Back At Humans, But Dogs Do, Ádám Miklósi, Eniko Kubinyi, József Topál, Márta Gácsi, Zsófia Virányi, Vilmos Csányi

Communication Skills Collection

The present investigations were undertaken to compare interspecific communicative abilities of dogs and wolves, which were socialized to humans at comparable levels. The first study demonstrated that socialized wolves were able to locate the place of hidden food indicated by the touching and, to some extent, pointing cues provided by the familiar human experimenter, but their performance remained inferior to that of dogs. In the second study, we have found that, after undergoing training to solve a simple manipulation task, dogs that are faced with an insoluble version of the same problem look/gaze at the human, while socialized wolves do …

Have you ever received a phone call from a telemarketer during dinner? Do e-mails entitled "Protect Your Computer Against Viruses for $9.95" or "GET A FREE PASS TO THOUSANDS OF XXX SITES" annoy you? Are you tired of watching advertisements that continue after the posted start time for a movie? Many Americans are irritated with the amount of daily interruptions caused by the current lack of advertising regulations. In some instances, the advertisers shift their marketing costs to unwilling e-mail users or moviegoers. This article focuses on unsolicited communications and potential solutions to the seemingly endless problem of spam.

On Wednesday 9 April, 2003, Dennis Blanton, director at the William and Mary Center for Archaeological Research contacted Michael Blakey, director of The Institute for Historical Biology, concerning the identification and inventory of human remains located at a local archaeological site during project testing. The human remains were picked up from the WMCAR labs on Tuesday, 15 April 2003 and the inventory and identification list followed a week later. This report is an in-depth description of the conclusions reached through the study of the remains.
