The purpose of this study is to examine chefs’ perceptions and practices relative to current and potentially future efforts to decrease food waste. Through qualitative inquiry, this research aims to identify food waste reduction practices in Northwest Arkansas restaurants; chef’s perceptions of these practices and zero waste cooking; the impact these practices have on successfully implementing sustainability; and the biggest challenges in reducing food waste in restaurants. The results of this study will assist chefs and restaurant owners by providing guidance on practices easily utilized in restaurants currently.

Fruit and vegetable consumption is particularly low in Arkansas with only a small percentage of residents meeting daily recommendations. Arkansas also has one of the highest percentages of food insecurity and obesity in the United States. Low-income households, such as Supplemental Nutrition Assistance Program (SNAP) recipients, are at a higher risk of these issues. Financial assistance programs have been implemented to help in aiding these problems. The Double Up Food Bucks program (DUFB) is one of these programs. DUFB provides matching financial vouchers for SNAP benefits recipients spend on fresh local produce at participating grocery stores and farmers’ markets. The …

In the immediate response phase of a natural disaster, local governments and nonprofit agencies often establish shelters for affected populations. Decisions regarding at which locations to open shelters are made ad hoc based on available building inventory, and may result in high travel impedance to reach shelters and congestion. While a growing number of studies have examined target selection by terrorists, the current study is the first to consider how combinations of factors present situated opportunities for terrorists to select particular types of targets as opposed to others. For many Americans who grew up in the 1960s, the first published information about Africans came directly from Africa, in the form of exotic photographs and stories in National Geographic. Susan Goldberg, Editor in Chief of National Geographic, addressed the issue of race portrayals in the magazine, reflecting on the realization that National Geographic often provided readers “their first look at the world” while rarely acknowledging the struggles of race in the United States. Skull burials are found all over the world. The cause of such ancient Native Americans deposits often lead to disagreement among scholars torn between warfare and ancestor veneration. One skull-and-mandible deposit, representing at least 352 people (A.D. 1253-1399), was uncovered at the Crenshaw site, a multiple-mound Caddo ceremonial center in southwest Arkansas. Most previous research suggested they were victims of interregional warfare from the Southern Plains or Mississippi Valley. Teachers have an important impact on students in the short- and long-term, but only teachers’ experience consistently predicts high teacher quality. This dissertation, divided into three chapters, investigates two topics that are related to teachers’ experience levels: turnover and retirement.

The first chapter studies the relationship between voluntary beginning teacher turnover and teachers’ levels of conscientiousness. It uses the data from the Beginning Teacher Longitudinal Study and the effort that teachers put on a survey taken during their first year in the profession as a proxy for teachers’ levels of conscientiousness. Through a close reading of Apuleius’ Golden Ass, I argue that characters such as Byrrhena, Photis, and Psyche function as positive examples of female sexual authority and autonomy and effectively challenge the phallocentric theories commonly applied to Greek and Roman gender and sexuality, the Penetrative Model associated with Foucault, and structuralism, associated in classics with French historians Marcel Detienne, J-P Vernant, and Pierre Vidal-Naquet. While still penetrated, many of these women actively claim their agency in sex through pleasure and narrative. This thesis aims at exploring the experiences of faculty with disabilities at a specific research 1 university in the South. Semi-structured interviews were conducted with five faculty members who self-identify as having a disability. These activists became known as "Dreamers" who continue to advocate for a pathway to citizenship for all immigrants. Through media, speeches, and artwork, Dreamers use the cultural narrative of the "American Dream" to create the boundaries of their American identity. Traditionally, American Identity is studied through 4 schools of thought: ethno-culturalism, liberalism, civic republicanism, and incorporationism. This study examined the influence of attachment and relational maintenance behaviors on relational uncertainty. Ninety individuals currently involved in romantic relationships completed measures assessing their attachment (i.e., secure, preoccupied, dismissive, fearful), relational uncertainties (i.e., self, partner, relationship), and relational maintenance behaviors (i.e., shared tasks, shared networks, positivity, openness, assurances). Findings demonstrated that both secure attachment and fearful attachment were not significantly associated with self, partner, or relationship uncertainty. In addition, dismissive attachment was negatively associated with partner uncertainty and positively associated with relationship uncertainty. In September 1917, Fort Smith telephone operators formed a local of the International Brotherhood of Electrical Workers. Soon after, company leaders dismissed two of the women who were instrumental in the formation of the union. After many attempts to meet and negotiate with the company leaders, the remaining operators walked out and began striking on September 19. This strike lasted almost four months and brought chaos into the city including the indictments, trials, and convictions of the mayor, J. H. Wright, and chief of police, Jim Fernandez. The election after Wright’s conviction saw the first female votes in Arkansas history. …

The intent of this project was to explore the history of the U.S. Military Post at Sauk Centre, Minnesota (Site # 21SN0198). The aim was to find out when it was built and why and to uncover any remaining physical evidence of the Post and the people who passed through it.

This is a cross-sectional study that investigated the relationship between preconception care knowledge, trait mindfulness, perceived discrimination, and coping self-efficacy. It addressed the lack of research into the effects of pregnancy-related distress on maternal mortality in African American women. There were 117 participants ages 18 -30 whose data was collected through an online survey. The results suggest that greater preconception care knowledge predicts greater pregnancy-related distress coping self-efficacy. Trait mindfulness also predicted pregnancy-related distress coping self-efficacy. Perceived discrimination did not predict coping self- efficacy in a negative direction as expected.

In this essay, I provide a different perspective on the Syrian conflict by examining how the war’s reach can also be located amid the losses, interruptions, and experiences of those Syrians who have until now largely escaped its incredible violence. By looking closely at how the war has altered the life trajectories of and produced distinct modes of vulnerability for military-age men, I develop an argument about how, although they avoid fighting by going to work in Qatar, the lives of a group of Syrian men remain defined by conscription. The cruise ship industry, the fastest-growing segment in the leisure travel market, has contributed significantly to the economic transformation of developing countries, particularly in the Caribbean Basin. This paper applies a difference-in-differences methodology to examine the causal impact of the introduction of cruise ship ports on human capital development in Mexico, as reflected by educational attainment. Using variations in school enrollment, segregated by gender and age across states and municipalities, I find that the economic consequences derived from this form of tourism do not translate into incremental, permanent improvements in all quality of life indicators considered, most saliently in schooling. …

The purpose of the current study was to conduct a pilot investigation of the internal construct validity of the four modules of the PEAK Comprehensive Assessment (PCA). The PCA has been developed through robust research over the past five years (Dixon et al. 2017) and is designed to evaluate language and cognitive skills of individuals with developmental disabilities, including neurodevelopmental disorders such as Autism Spectrum Disorder. The study focuses on the question: How do Arab and Arab-American students experience inclusivity and exclusivity on and off campus? The research sample includes five Portland State students, three Arab-Americans and two international Arabs.
